Last minute birthday party!

At the last minute, my husband wanted a birthday party. I suggested a 12 person sit down, and he suggested his 45 best friends. Guess who won? There was no way I could cook for that many. My solution was throwing cowhides down on the grass, beer and champers in huge ice filled buckets, and ordering deep dish Chicago pizzas while making the rest from scratch.

Here’s how I filled in the take-out to make the night fabulous. My arugula pesto with crudite, packed charcuterie boards, homemade buttermilk ranch dressing for salads, and a requested chocolate cake with vanilla frosting.

When it came to the cake there was no room for error, so I went to Deb at Smitten Kitchen. She raves about this Gourmet double chocolate layer cake that has over 1,500 comments which was enough for me (btw, the cakes sunk a bit in the middle which sent me into a panic but once flipped were gorgeous). With the cake recipe from Gourmet, I made Smitten Kitchen’s Swiss buttercream frosting it was a flawless companion. Happy birthday, sweetheart.
